Although, many prefer the oyster with onion, vinegar and a hot sauce; for me, it easily reaches the peak of its taste with a few drops of lemon juice and black pepper. This healthy and delicious seafood variety is best consumed fresh.
Moreover, sometimes we need to indulge our palates with more! As such, “oyster” rings another bell as a small pastry snack: oyster-shaped börek.
As you would diversify its filling according to your taste, I prefer to use leek for this recipe. Since its success is already based on its shape, you can watch how it is done in the video below.
Ingredients
4 phyllos
500 grams of minced meat
2 leeks
1 yolk
Olive oil
Salt
Black pepper
This recipe will yield 16 oyster-shaped böreks to you. For a start, moisturize the phyllos with olive oil and cut them in four.
For the filling, chop the leeks thinly and fry them in half Turkish tea-glass of olive oil. Add the minced meat into the pan and season it with some black pepper and salt.
As you see in the video, put your finger in the middle of one side of the phyllo and push it into the phyllo to make the two edges meet in the middle. Open up the edges to put the filling on. Fold it into two. To secure it from opening up later, when you fold it, place the edges of the bottom into the creases of the upper fold.
Brush the yolk over the böreks and then place them into the oven preheated to 180 degrees. 15-20 minutes will be enough for them to bake.
Bon appètit and enjoy the taste of life…

Since ready-made phyllo became popular, pastry recipes have become less of a matter of skills and taste!
Although it originated in Lebanon, İçli köfte (pronounced as eech-lee kof-tey) entered Turkish cuisine and can now be listed as another Turkish food that requires a lot of work just like mantı (Turkish dumplings) and yaprak sarması (Turkish-style stuffed vine leaves).
