Sweet Cherry Tomato Pickles

The Red mullet grill you saw on the internet may dazzle your eyes. The smell coming from the meat-ball serving food-truck can make you want to breathe in all the oxygen in the air. Or it may be the sizzling baklava when the cook pours in the sherbet that can be blamed for your rumbling stomach.

 

And there are some, even the name of which is enough to captivate you, let alone their appearance, smell or sound.

 

Such as pickles

 

Even the word pickle is enough to make your mouth water. It is one of the best accompaniments. It is possible there are even times when it alone makes for a meal.

 

While we leave it to AdileNaşit and MünirÖzkul to debate over whether pickles are best made with lemon juice or vinegar; today I’m going to share with you a recipe for sweet cherry tomato pickle that has both of those ingredients.

 

You have to pick the greenest and therefore completely unripe cherry tomatoes for this recipe. Because the tomatoes are going to be as soft as a sponge when you eventually take them out of the jar, and a wrong choice like that would ruin your dreams of eating crispy pickles in the end.

 

Ingredients

 

Unripe sweet cherry tomatoes

Bottle water, 2 liters

Apple vinegar, 750 ml

Grape vinegar, 750 ml

Juice of 3 lemons

A whole garlic

A handful of rock salt

Chickpeas

First off, toss the raw chickpeas into the bottom of a 5 lt jar. Afterwards, pack the jar with sweet cherry tomatoes and place the coarsely thickly sliced garlic cloves on top of the jar.

 

Preparea mixture with water, grape vinegar, apple vinegar, lemon juice and a handful of rock salt. Fill in the jar with this mixture till it’s filled past the tomatoes.

 

You may start to consume the sweet tomato pickles after two weeks in the refrigerator (avr. 2 centigrade degrees).

 

These pickle is thought to be an accompaniment for the meals of legumes such as chickpeas, dried beans and lentils. But beware it has a possibility to replace with those meals and magnet your forks over itself only.
